Let’s face it—some days, the last thing you want is a plate full of greens or another bowl of fruit. Whether you’re not a fan of the taste, texture, or just tired of salads, the good news is: you don’t have to eat fruits and vegetables the traditional way to get the benefits. I also see plenty of picky eaters who need creative (and delicious) ideas that will help you sneak in more nutrients.

As a health professional who works one-on-one with women using a holistic approach (nutrition, movement, lifestyle choices, and everything else in-between), I’ve seen firsthand how these little hacks make a huge impact on energy, gut health, hormones, digestion, and mood.

1. Blend Them Into Smoothies

Smoothies are the ultimate nutrient delivery system. Add a handful of spinach or frozen cauliflower rice to your morning smoothie—you won’t even taste it. Pair it with fruit, protein powder, and you’re golden!

Bonus Tip: Frozen zucchini adds creaminess without changing the flavor.

2. Bake Them Into Brownies or Muffins

Who said veggies don’t belong in dessert? You’d be surprised how well sweet potato, zucchini, or even beets blend into baked goods like chocolate zucchini muffins or carrot cake muffins.

3. Toss Veggies Into Protein Pasta Dishes

Use lentil or chickpea pasta for extra protein, then stir in spinach, carrots, squash, eggplant, mushrooms, and/or olives while your sauce is cooking. The texture blends right in, and you’ve got a sneaky veggie-loaded dinner in minutes.

Steam and blend veggies like carrots, butternut squash, or cauliflower, then mix them into marinara or cheese sauce. This is an easy trick for picky eaters and busy women who want a fast, nutritious meal. For example, I love adding carrots, celery, and bell pepper to my tomato sauces. Butternut squash and carrots are perfect for cheesy sauces!

5. Stir Fruits and Veggies Into Oatmeal

Grated zucchini or carrot in oatmeal? I know it sounds crazy… Trust me—it works. Add in 1/2 scoop of protein powder and top it with some fruit of choice, and you’ve got a powerhouse breakfast full of fiber, vitamins, and slow-digesting carbs.

My favorite combinations are:

  • dried cherries, fresh blueberries and raspberries, topped with chocolate chips
  • peaches, strawberries, and walnuts
  • blueberries, bananas, strawberries, and pumpkin seeds

6. Upgrade Your Pancakes or Waffles

Mix in canned pumpkin or sweet potatoes into your batter for a simple nutrient boost. Add a bit of cinnamon and nutmeg for some extra benefits. It’s especially helpful on weekends when you want a cozy brunch but still want to feel good afterward.

7. Freeze Them Into Popsicles

This has been my favorite hack since spring 2021! Blend fresh or frozen fruit and coconut water. Then freeze them in some easy popsicle molds from Amazon. Great for hot days, sweet cravings, or an after-workout treat.

8. Make Veggie-Packed Egg Bites, Scramble, or Frittatas

Chop up mushrooms, bell peppers, tomatoes, or spinach and mix into scrambled eggs, oven egg-bites, or bake them into a frittata. Add a low fat cheese and herbs to tie the flavors together.

9. Mix Them Into Meatballs or Burgers

Finely chopped or grated veggies: carrots, onion, zucchini, cauliflower, broccoli, or kale blend seamlessly into ground meat. It adds moisture and fiber, and no one will know they’re eating vegetables with their burger.

10. Use Mashed Fruit or Veggies as Sweeteners or Binders

Mashed bananas, pumpkin, or applesauce can replace oil or sugar in baking and make a great binder in muffins or pancakes. Plus, they add flavor, moisture, and nutrients all in one.
